Spiced Salmon with Roasted Cauliflower and Mint-Lime Glaze

A vibrant and flavorful dish that combines roasted cauliflower, a spiced salmon fillet, and a refreshing mint-lime glaze.

Ingredients:

  • 1 lb salmon fillet, skin on
  • 1 head cauliflower, cut into florets
  • 2 tbsp olive oil
  • 1 tsp cumin powder
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional)
  • Salt and black pepper to taste
  • For the glaze:
    • 1/4 cup chopped fresh mint
    • 2 tbsp lime juice
    • 1 tbsp honey
    • 1 tbsp olive oil

Instructions:

  1. Preheat oven to 400°F (200°C). Toss cauliflower florets with 1 tablespoon of olive oil, cumin powder, paprika, cayenne pepper (if using), salt, and black pepper. Spread on a baking sheet and roast for 20-25 minutes, or until tender and lightly browned.
  2. While the cauliflower is roasting, pat the salmon fillet dry and season with salt and pepper. Drizzle remaining olive oil over the salmon.
  3. Place the salmon fillet on a separate baking sheet lined with parchment paper. Bake for 12-15 minutes, or until cooked through and flaky.
  4. Meanwhile, prepare the glaze by combining chopped mint, lime juice, honey, and olive oil in a small bowl. Stir well to combine.
  5. Remove the salmon and cauliflower from the oven. Drizzle the glaze over the salmon and serve immediately with the roasted cauliflower.
