Ingredients:
- 1 lb salmon fillet, skin on
- 1 head cauliflower, cut into florets
- 2 tbsp olive oil
- 1 tsp cumin powder
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper (optional)
- Salt and black pepper to taste
- For the glaze:
- 1/4 cup chopped fresh mint
- 2 tbsp lime juice
- 1 tbsp honey
- 1 tbsp olive oil
Instructions:
- Preheat oven to 400°F (200°C). Toss cauliflower florets with 1 tablespoon of olive oil, cumin powder, paprika, cayenne pepper (if using), salt, and black pepper. Spread on a baking sheet and roast for 20-25 minutes, or until tender and lightly browned.
- While the cauliflower is roasting, pat the salmon fillet dry and season with salt and pepper. Drizzle remaining olive oil over the salmon.
- Place the salmon fillet on a separate baking sheet lined with parchment paper. Bake for 12-15 minutes, or until cooked through and flaky.
- Meanwhile, prepare the glaze by combining chopped mint, lime juice, honey, and olive oil in a small bowl. Stir well to combine.
- Remove the salmon and cauliflower from the oven. Drizzle the glaze over the salmon and serve immediately with the roasted cauliflower.
