Spiced Salmon Steaks with Roasted Zucchini and Sesame-Ginger Glaze

A flavorful and healthy weeknight dinner featuring salmon steaks coated in a fragrant spice rub and served alongside roasted zucchini drizzled with a vibrant sesame-ginger glaze.

Ingredients:

  • For the Salmon:

    • 2 salmon steaks (6 oz each)
    • 1 teaspoon ground cumin
    • 1/2 teaspoon paprika
    • 1/4 teaspoon cayenne pepper (optional)
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
  • For the Zucchini:

    • 2 medium zucchini, sliced into rounds
    • 1 tablespoon olive oil
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper
  • For the Sesame-Ginger Glaze:

    • 2 tablespoons soy sauce
    • 1 tablespoon honey
    • 1 tablespoon sesame oil
    • 1 teaspoon grated fresh ginger
    • 1 clove garlic, minced

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. In a small bowl, combine cumin, paprika, cayenne pepper (if using), salt, and black pepper. Rub spice mixture evenly over both sides of salmon steaks.

  3. Arrange zucchini slices on the prepared baking sheet. Drizzle with olive oil, season with salt and pepper.

  4. Roast salmon and zucchini for 12-15 minutes, or until salmon is cooked through and zucchini is tender.

  5. While the salmon and zucchini roast, prepare the glaze. In a small saucepan over medium heat, combine soy sauce, honey, sesame oil, ginger, and garlic. Bring to a simmer, stirring occasionally, until slightly thickened (about 2-3 minutes). Remove from heat.

  6. Once salmon and zucchini are cooked, drizzle with sesame-ginger glaze. Serve immediately.
