Ingredients:
- 1 cup cooked chickpeas, drained and rinsed
- 1 cup grated carrots
- 1/2 cup wheat flour
- 1/4 cup chopped cilantro
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1/4 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
- Vegetable oil for frying
For the Mango Salsa:
- 1 ripe mango, diced
- 1/4 cup chopped red onion
- 1/4 cup chopped cilantro
- 1 jalapeño pepper, finely chopped (seeds removed for less heat)
- Juice of 1 lime
- Pinch of salt
Instructions:
In a large bowl, combine the cooked chickpeas, grated carrots, wheat flour, cilantro, cumin, coriander, turmeric, cayenne pepper (if using), salt, and black pepper. Mix well until everything is combined.
Heat a tablespoon of vegetable oil in a skillet over medium heat.
Using your hands or a spoon, drop heaping tablespoons of the chickpea mixture into the hot oil. Flatten slightly with the back of a spoon to form fritters.
Cook for about 3-4 minutes on each side, or until golden brown and cooked through. Remove from the skillet and drain on paper towels.
While the fritters are cooking, prepare the mango salsa. Combine all the ingredients in a bowl and mix well.
Serve the warm fritters topped with the refreshing mango salsa.
