Ingredients:
- 1 pound smoked salmon, flaked
- 2 large carrots, grated
- 1/4 cup chopped fresh dill
- 1/4 cup all-purpose flour
- 1 egg, beaten
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Olive oil for frying
For the Zesty Dill Yogurt:
- 1 cup plain Greek yogurt
- 2 tablespoons chopped fresh dill
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- Pinch of black pepper
Instructions:
In a large bowl, combine the flaked salmon, grated carrots, dill, flour, egg, salt, and pepper. Gently mix until just combined. Do not overmix.
Heat a thin layer of olive oil in a large skillet over medium heat.
Drop spoonfuls of the salmon mixture into the hot oil. Flatten each fritter slightly with the back of a spoon. Cook for 3-4 minutes per side, or until golden brown and cooked through.
While the fritters are cooking, prepare the zesty dill yogurt. In a small bowl, combine the Greek yogurt, dill, lemon juice, salt, and pepper. Mix well and set aside.
Serve the hot salmon fritters with a generous dollop of the zesty dill yogurt.
