Smoky Salmon & Carrot Fritters with Zesty Dill Yogurt

Crispy, flavorful salmon fritters packed with shredded carrots and a hint of smokiness, served with a cooling yogurt dip bursting with fresh dill.

Ingredients:

  • 1 pound smoked salmon, flaked
  • 2 large carrots, grated
  • 1/4 cup chopped fresh dill
  • 1/4 cup all-purpose flour
  • 1 egg, beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil for frying

For the Zesty Dill Yogurt:

  • 1 cup plain Greek yogurt
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • Pinch of black pepper

Instructions:

  1. In a large bowl, combine the flaked salmon, grated carrots, dill, flour, egg, salt, and pepper. Gently mix until just combined. Do not overmix.

  2. Heat a thin layer of olive oil in a large skillet over medium heat.

  3. Drop spoonfuls of the salmon mixture into the hot oil. Flatten each fritter slightly with the back of a spoon. Cook for 3-4 minutes per side, or until golden brown and cooked through.

  4. While the fritters are cooking, prepare the zesty dill yogurt. In a small bowl, combine the Greek yogurt, dill, lemon juice, salt, and pepper. Mix well and set aside.

  5. Serve the hot salmon fritters with a generous dollop of the zesty dill yogurt.
