Raspberry Panna Cotta Tiramisu Cake

A creative fusion of Italian desserts, combining the creamy texture of panna cotta with the coffee-soaked layers of tiramisu.

Raspberry Panna Cotta Tiramisu Cake

Ingredients:

For the Coffee Syrup:

  • 1 cup water
  • 1 cup granulated sugar
  • 2 tablespoons instant coffee powder
  • 2 tablespoons unsweetened cocoa powder

For the Panna Cotta Mousse:

  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1 tablespoon vanilla extract
  • 1 cup granulated sugar
  • 8 ounces mascarpone cheese

For the Raspberry Jam:

  • 1 cup fresh raspberries
  • 1/4 cup granulated sugar

For the Cake Layers:

  • 12-16 ladyfingers
  • 2 tablespoons unsweetened cocoa powder

Instructions:

Step 1: Prepare the Coffee Syrup

Combine water, sugar, coffee powder, and cocoa powder in a saucepan. Heat over medium heat, stirring until sugar dissolves. Let cool completely.

Step 2: Make the Panna Cotta Mousse

In a separate saucepan, combine heavy cream, whole milk, vanilla extract, and granulated sugar. Heat over medium heat, stirring until sugar dissolves. Remove from heat and let cool slightly. Stir in mascarpone cheese until well combined. Cover and refrigerate for at least 4 hours or overnight.

Step 3: Prepare the Raspberry Jam

Combine fresh raspberries and granulated sugar in a bowl. Let sit at room temperature for about 15 minutes, allowing raspberries to release their juice. Mash with a fork to create a chunky jam.

Step 4: Assemble the Cake Layers

Dip ladyfingers into the coffee syrup for about 3-5 seconds on each side. They should be soft and pliable but not too wet. Place half of the ladyfingers in a single layer in a large serving dish or individual glasses.

Step 5: Add the Panna Cotta Mousse

Spread half of the panna cotta mousse over the coffee-soaked ladyfingers. Top with fresh raspberries and drizzle with raspberry jam.

Step 6: Repeat the Layers

Repeat steps 4 and 5, starting with the remaining ladyfingers, followed by the rest of the panna cotta mousse, more fresh raspberries, and a final layer of raspberry jam.

Step 7: Serve and Enjoy!

Refrigerate for at least 30 minutes before serving. Slice into individual servings or use as a single serving dish.
