Matcha and White Chocolate Creme Brûlée Tarts

Ingredients
For the Crust:
- 1 1/2 cups all-purpose flour
- 1/4 cup confectioners' sugar
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, chilled and cut into small pieces
For the Matcha Creme Brûlée Filling:
- 1 cup granulated sugar
- 3 large egg yolks
- 1/2 cup heavy cream
- 1 tablespoon matcha powder (good quality)
- 1 teaspoon vanilla extract
For the White Chocolate Topping:
- 8 ounces white chocolate chips
- 1 tablespoon unsalted butter, softened
Instructions
Make the Crust:
- Preheat your oven to 350°F (180°C).
- In a medium bowl, whisk together flour, confectioners' sugar, and salt.
- Add cold butter and use a pastry blender or your fingertips to work it into the dry ingredients until mixture resembles coarse crumbs.
- Gradually add ice-cold water, stirring with a fork until dough comes together in a ball.
- Turn dough out onto a lightly floured surface and roll out to about 1/8 inch thickness.
- Use a cookie cutter or the rim of a glass to cut out circles of dough.
- Gather scraps, re-roll dough, and repeat cutting process.
Make the Matcha Creme Brûlée Filling:
- In a medium saucepan, whisk together sugar, egg yolks, and heavy cream until well combined.
- Add matcha powder and vanilla extract; whisk to dissolve.
- Cook over medium heat, stirring constantly, until mixture thickens and coats the back of a spoon (about 10-12 minutes).
- Strain filling through a fine-mesh sieve into a clean bowl.
Assemble Tarts:
- Roll out dough circles to about 1/8 inch thickness.
- Spoon a small amount of matcha creme brûlée filling into the center of each dough circle.
- Fold dough in half over the filling, forming a triangle or a square shape, and press edges together with a fork to seal.
- Brush tops with a little water and sprinkle with granulated sugar.
Bake Tarts:
- Place tarts on a baking sheet lined with parchment paper, leaving about 1 inch space between each tart.
- Bake for 20-25 minutes or until the dough is golden brown.
- Allow to cool completely on a wire rack.
Make White Chocolate Topping:
- Melt white chocolate chips in a double boiler or in a microwave-safe bowl in 30-second increments, stirring between each interval, until smooth.
- Stir in softened butter.

Place baked tarts on a serving plate or individual plates. Drizzle with melted white chocolate topping and sprinkle with matcha powder if desired.
