Matcha and White Chocolate Creme Brûlée Tarts

A unique twist on traditional creme brûlée, these matcha and white chocolate tarts are a delightful combination of flavors and textures.

Ingredients

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/4 cup confectioners' sugar
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, chilled and cut into small pieces

For the Matcha Creme Brûlée Filling:

  • 1 cup granulated sugar
  • 3 large egg yolks
  • 1/2 cup heavy cream
  • 1 tablespoon matcha powder (good quality)
  • 1 teaspoon vanilla extract

For the White Chocolate Topping:

  • 8 ounces white chocolate chips
  • 1 tablespoon unsalted butter, softened

Instructions

Make the Crust:

  1. Preheat your oven to 350°F (180°C).
  2. In a medium bowl, whisk together flour, confectioners' sugar, and salt.
  3. Add cold butter and use a pastry blender or your fingertips to work it into the dry ingredients until mixture resembles coarse crumbs.
  4. Gradually add ice-cold water, stirring with a fork until dough comes together in a ball.
  5. Turn dough out onto a lightly floured surface and roll out to about 1/8 inch thickness.
  6. Use a cookie cutter or the rim of a glass to cut out circles of dough.
  7. Gather scraps, re-roll dough, and repeat cutting process.

Make the Matcha Creme Brûlée Filling:

  1. In a medium saucepan, whisk together sugar, egg yolks, and heavy cream until well combined.
  2. Add matcha powder and vanilla extract; whisk to dissolve.
  3. Cook over medium heat, stirring constantly, until mixture thickens and coats the back of a spoon (about 10-12 minutes).
  4. Strain filling through a fine-mesh sieve into a clean bowl.

Assemble Tarts:

  1. Roll out dough circles to about 1/8 inch thickness.
  2. Spoon a small amount of matcha creme brûlée filling into the center of each dough circle.
  3. Fold dough in half over the filling, forming a triangle or a square shape, and press edges together with a fork to seal.
  4. Brush tops with a little water and sprinkle with granulated sugar.

Bake Tarts:

  1. Place tarts on a baking sheet lined with parchment paper, leaving about 1 inch space between each tart.
  2. Bake for 20-25 minutes or until the dough is golden brown.
  3. Allow to cool completely on a wire rack.

Make White Chocolate Topping:

  1. Melt white chocolate chips in a double boiler or in a microwave-safe bowl in 30-second increments, stirring between each interval, until smooth.
  2. Stir in softened butter.

Serve and Enjoy!

Place baked tarts on a serving plate or individual plates. Drizzle with melted white chocolate topping and sprinkle with matcha powder if desired.
