Introduction

Crepes Suzette is a classic French dessert that typically consists of thin crepes filled with orange-flavored butter and Grand Marnier-infused sugar. However, in this recipe, we will be giving it a Japanese twist by infusing the crepes with matcha powder and serving them with a black sesame sauce.

Ingredients

For the Crepes:

  • 1 cup all-purpose flour
  • 2 tablespoons matcha powder
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup water
  • 1 tablespoon butter, melted
  • Salt to taste

For the Black Sesame Sauce:

  • 1/2 cup black sesame seeds
  • 1/4 cup granulated sugar
  • 2 tablespoons water
  • 1 tablespoon soy sauce (optional)

For the Orange-Flavored Butter:

  • 1 stick unsalted butter, softened
  • Zest of 1 orange
  • 1 tablespoon Grand Marnier (or to taste)

Instructions

Make the Crepes:

  1. In a large mixing bowl, whisk together flour, matcha powder, and salt.
  2. In a separate bowl, whisk together eggs, milk, water, and melted butter.
  3. Gradually pour the wet ingredients into the dry ingredients and mix until smooth. The batter should still be slightly lumpy.
  4. Let the batter rest for 30 minutes to allow the flour to absorb the liquid.
  5. Heat a small non-stick pan over medium heat. Pour about 1/4 cup of the crepe batter into the pan and tilt the pan to evenly coat the bottom.
  6. Cook the crepe for 2-3 minutes, until the edges start to curl. Flip the crepe and cook for another minute.

Make the Black Sesame Sauce:

  1. In a small saucepan, combine black sesame seeds and granulated sugar.
  2. Add water and soy sauce (if using) to the saucepan.
  3. Cook over medium heat, stirring constantly, until the mixture thickens into a smooth sauce.
  4. Strain the sauce through a fine-mesh sieve to remove any remaining sesame seeds.

Make the Orange-Flavored Butter:

  1. In a small bowl, mix together softened butter and orange zest.
  2. Add Grand Marnier (or to taste) to the butter mixture and mix until well combined.

Assembly

  1. Fill each crepe with a small amount of orange-flavored butter.
  2. Fold the crepes in half to enclose the filling.
  3. Serve the crepes warm with black sesame sauce spooned over the top.
