Lemon Ricotta Waffles with Honey and Thyme
Ingredients:
- 2 cups all-purpose flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1/4 cup granulated sugar
- 2 large eggs
- 1 cup ricotta cheese
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon honey
- 2 sprigs fresh thyme, chopped
- 4 tablespoons unsalted butter, melted
Instructions:
- Preheat the waffle iron according to the manufacturer's instructions.
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- In a separate bowl, whisk together eggs, ricotta cheese, lemon juice, honey, and thyme.

Variations:
- Substitute 1/4 cup chopped fresh mint for the thyme for a different herbal flavor profile.
