Lemon Ricotta Waffles with Honey and Fresh Berries

A twist on classic waffles, these lemon ricotta waffles are infused with the brightness of lemon zest and the creaminess of ricotta cheese, topped with a drizzle of honey and fresh berries.

Lemon Ricotta Waffles with Honey and Fresh Berries

Ingredients

  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 cup whole milk
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon grated lemon zest
  • 1/2 cup ricotta cheese
  • 2 tablespoons unsalted butter, melted
  • Fresh berries and honey for serving

Instructions

Make the Waffles

  1. Preheat your waffle iron according to the manufacturer's instructions.
  2. In a medium bowl, whisk together flour, baking powder, salt, and sugar.
  3. In a large bowl, whisk together eggs, milk, lemon juice, and lemon zest.
  4. Add the dry ingredients to the wet ingredients and stir until just combined.
  5. Stir in the ricotta cheese and melted butter.
  6. The batter should still be slightly lumpy.

Cook the Waffles

  1. Pour about 1/4 cup of the batter onto the center of the waffle iron.
  2. Spread the batter out to the edges of the iron, leaving a small border around the edges.
  3. Cook for 3-5 minutes, or until the waffles are golden brown and crispy.
  4. Repeat with the remaining batter.

Serve

  1. Serve the waffles warm, topped with fresh berries and a drizzle of honey.
