Lemon Ricotta Waffles with Honey and Fresh Berries
Ingredients
- 2 cups all-purpose flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1/4 cup granulated sugar
- 2 large eggs
- 1 cup whole milk
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon grated lemon zest
- 1/2 cup ricotta cheese
- 2 tablespoons unsalted butter, melted
- Fresh berries and honey for serving
Instructions
Make the Waffles
- Preheat your waffle iron according to the manufacturer's instructions.
- In a medium bowl, whisk together flour, baking powder, salt, and sugar.
- In a large bowl, whisk together eggs, milk, lemon juice, and lemon zest.
- Add the dry ingredients to the wet ingredients and stir until just combined.
- Stir in the ricotta cheese and melted butter.
- The batter should still be slightly lumpy.
Cook the Waffles
- Pour about 1/4 cup of the batter onto the center of the waffle iron.
- Spread the batter out to the edges of the iron, leaving a small border around the edges.
- Cook for 3-5 minutes, or until the waffles are golden brown and crispy.
- Repeat with the remaining batter.
Serve
- Serve the waffles warm, topped with fresh berries and a drizzle of honey.
