Lemon Ricotta Waffles with Fresh Berries and Caramel Sauce

Ingredients:
For the waffles:
- 2 cups all-purpose flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1/4 cup granulated sugar
- 2 large eggs
- 1 cup milk
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons ricotta cheese, softened
- 2 tablespoons melted unsalted butter
For the caramel sauce:
- 1 cup granulated sugar
- 1/2 cup heavy cream
- 1 tablespoon unsalted butter
For the toppings:
- Fresh berries (strawberries, blueberries, raspberries)
- Whipped cream or whipped coconut cream (optional)
Instructions:
Make the waffles:
- Preheat your waffle iron according to the manufacturer's instructions.
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- In a separate bowl, whisk together eggs, milk, lemon juice, ricotta cheese, and melted butter.
- Add the wet ingredients to the dry ingredients and stir until just combined. The batter should still be slightly lumpy.
- Pour about 1/4 cup of batter onto the center of the waffle iron and cook until golden brown.
- Repeat with remaining batter.
Make the caramel sauce:
- Combine sugar, heavy cream, and butter in a small saucepan over medium heat.
- Cook, stirring occasionally, until the sugar dissolves and the mixture turns a deep amber color.
- Remove from heat and let cool slightly before serving.
Assemble and serve:
- Serve waffles warm with fresh berries and a drizzle of caramel sauce.
- If desired, top with whipped cream or whipped coconut cream and additional berries.
