Lemon Ricotta Waffles with Fresh Berries and Caramel Sauce

A unique twist on traditional waffles, infused with the brightness of lemon and the creaminess of ricotta.

Lemon Ricotta Waffles with Fresh Berries and Caramel Sauce

Servings:

4-6 people

Ingredients:

For the waffles:

  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 cup milk
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons ricotta cheese, softened
  • 2 tablespoons melted unsalted butter

For the caramel sauce:

  • 1 cup granulated sugar
  • 1/2 cup heavy cream
  • 1 tablespoon unsalted butter

For the toppings:

  • Fresh berries (strawberries, blueberries, raspberries)
  • Whipped cream or whipped coconut cream (optional)

Instructions:

Make the waffles:

  1. Preheat your waffle iron according to the manufacturer's instructions.
  2. In a large bowl, whisk together flour, baking powder, salt, and sugar.
  3. In a separate bowl, whisk together eggs, milk, lemon juice, ricotta cheese, and melted butter.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. The batter should still be slightly lumpy.
  5. Pour about 1/4 cup of batter onto the center of the waffle iron and cook until golden brown.
  6. Repeat with remaining batter.

Make the caramel sauce:

  1. Combine sugar, heavy cream, and butter in a small saucepan over medium heat.
  2. Cook, stirring occasionally, until the sugar dissolves and the mixture turns a deep amber color.
  3. Remove from heat and let cool slightly before serving.

Assemble and serve:

  1. Serve waffles warm with fresh berries and a drizzle of caramel sauce.
  2. If desired, top with whipped cream or whipped coconut cream and additional berries.
