Lemon Ricotta Panna Cotta Waffles

A unique dessert waffle recipe that combines the flavors of lemon ricotta panna cotta.

Lemon Ricotta Panna Cotta Waffles

Makes 8-10 waffles

Ingredients

For the waffles:

  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 cup whole milk
  • 2 tablespoons lemon zest
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 cup ricotta cheese
  • 2 tablespoons unsalted butter, melted

For the panna cotta topping:

  • 1 cup heavy cream
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup lemon curd (see below)

Instructions

To make the waffles:

  1. Preheat your waffle iron according to the manufacturer's instructions.
  2. In a medium bowl, whisk together flour, baking powder, salt, and granulated sugar.
  3. In a large bowl, whisk together eggs, milk, lemon zest, lemon juice, ricotta cheese, and melted butter.
  4. Add the dry ingredients to the wet ingredients and stir until just combined.
  5. Pour about 1/4 cup of batter onto the center of the waffle iron.
  6. Cook for 3-5 minutes or until the waffles are golden brown and crispy.

To make the panna cotta topping:

  1. In a small saucepan, combine heavy cream, granulated sugar, and vanilla extract.
  2. Bring to a simmer over medium heat, then reduce the heat to low and let cook for 5-7 minutes or until slightly thickened.
  3. Stir in lemon curd (see below).
  4. Let cool to room temperature.

To make the lemon curd:

  1. In a small saucepan, combine 1/2 cup granulated sugar, 2 tablespoons freshly squeezed lemon juice, and 2 tablespoons unsalted butter.
  2. Bring to a simmer over medium heat, then reduce the heat to low and let cook for 5-7 minutes or until slightly thickened.

Assembly:

  1. Place a cooked waffle on a serving plate.
  2. Top with a dollop of panna cotta topping (about 1 tablespoon).
  3. Serve immediately and enjoy!
