Lemon Ricotta Panna Cotta Waffles

Ingredients
For the waffles:
- 2 cups all-purpose flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1/4 cup granulated sugar
- 2 large eggs
- 1 cup whole milk
- 2 tablespoons lemon zest
- 2 tablespoons freshly squeezed lemon juice
- 1/4 cup ricotta cheese
- 2 tablespoons unsalted butter, melted
For the panna cotta topping:
- 1 cup heavy cream
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 1/4 cup lemon curd (see below)
Instructions
To make the waffles:
- Preheat your waffle iron according to the manufacturer's instructions.
- In a medium bowl, whisk together flour, baking powder, salt, and granulated sugar.
- In a large bowl, whisk together eggs, milk, lemon zest, lemon juice, ricotta cheese, and melted butter.
- Add the dry ingredients to the wet ingredients and stir until just combined.
- Pour about 1/4 cup of batter onto the center of the waffle iron.
- Cook for 3-5 minutes or until the waffles are golden brown and crispy.
To make the panna cotta topping:
- In a small saucepan, combine heavy cream, granulated sugar, and vanilla extract.
- Bring to a simmer over medium heat, then reduce the heat to low and let cook for 5-7 minutes or until slightly thickened.
- Stir in lemon curd (see below).
- Let cool to room temperature.
To make the lemon curd:
- In a small saucepan, combine 1/2 cup granulated sugar, 2 tablespoons freshly squeezed lemon juice, and 2 tablespoons unsalted butter.
- Bring to a simmer over medium heat, then reduce the heat to low and let cook for 5-7 minutes or until slightly thickened.
Assembly:
- Place a cooked waffle on a serving plate.
- Top with a dollop of panna cotta topping (about 1 tablespoon).
- Serve immediately and enjoy!
