Description

A French-inspired dessert that combines the lightness of crepes with the richness of lemon ricotta and caramelized fruit. The perfect blend of citrusy and creamy flavors.

Ingredients

  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup granulated sugar
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Filling:
    • 8 ounces ricotta cheese
    • 2 tablespoons freshly squeezed lemon juice
    • 1 tablespoon granulated sugar
    • Zest of 1 lemon
  • Caramelized fruit (see note):
    • 1 cup mixed berries (strawberries, blueberries, raspberries)
    • 1/4 cup granulated sugar

Instructions

Crepes

  1. In a medium bowl, whisk together flour and eggs.
  2. Add milk, sugar, melted butter, and vanilla extract; mix until smooth.
  3. Let the batter rest for 30 minutes to allow it to thicken.

Filling

  1. In a separate bowl, combine ricotta cheese, lemon juice, granulated sugar, and lemon zest.
  2. Mix well to combine.

Assembly

  1. Cook crepes according to manufacturer's instructions or recipe (about 2-3 minutes per side).
  2. Fill crepes with the ricotta mixture, leaving a small border around the edges.
  3. Add caramelized fruit on top of the filling.
  4. Fold the crepe in half over the filling and serve immediately.

Caramelized Fruit

  1. In a pan, combine mixed berries and granulated sugar.
  2. Cook over medium heat until the sugar dissolves, stirring occasionally.
  3. Increase the heat to medium-high; cook for an additional 5 minutes or until the fruit is caramelized and slightly charred.

Notes

  • For an authentic Suzette experience, serve with a sauce made from melted butter, orange flower water (optional), and Grand Marnier liqueur (if desired).
  • You can also use other types of citrus fruits like oranges or limes.
  • To make the dish more substantial, add chopped nuts or chocolate shavings on top.
