Lemon Ricotta Crepes Suzette

Ingredients
- 1 cup all-purpose flour
- 2 eggs
- 1/2 cup milk
- 1/4 cup granulated sugar
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- Filling:
- 8 ounces ricotta cheese
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon granulated sugar
- Zest of 1 lemon
- Caramelized fruit (see note):
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1/4 cup granulated sugar
Instructions
Crepes
- In a medium bowl, whisk together flour and eggs.
- Add milk, sugar, melted butter, and vanilla extract; mix until smooth.
- Let the batter rest for 30 minutes to allow it to thicken.
Filling
- In a separate bowl, combine ricotta cheese, lemon juice, granulated sugar, and lemon zest.
- Mix well to combine.
Assembly
- Cook crepes according to manufacturer's instructions or recipe (about 2-3 minutes per side).
- Fill crepes with the ricotta mixture, leaving a small border around the edges.
- Add caramelized fruit on top of the filling.
- Fold the crepe in half over the filling and serve immediately.
Caramelized Fruit
- In a pan, combine mixed berries and granulated sugar.
- Cook over medium heat until the sugar dissolves, stirring occasionally.
- Increase the heat to medium-high; cook for an additional 5 minutes or until the fruit is caramelized and slightly charred.
Notes
- For an authentic Suzette experience, serve with a sauce made from melted butter, orange flower water (optional), and Grand Marnier liqueur (if desired).
- You can also use other types of citrus fruits like oranges or limes.
- To make the dish more substantial, add chopped nuts or chocolate shavings on top.
