Lemon Meringue Cake Bars
A twist on the classic lemon meringue pie, these cake bars are perfect for a crowd.
Ingredients:
- 2 1/4 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon grated lemon zest
- 2 tablespoons freshly squeezed lemon juice
Meringue Topping:
- 3 large egg whites
- 1 cup granulated sugar
Assembly and Baking:
- Preheat the oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper.
- In a medium bowl, whisk together flour, sugar, baking powder, and salt.
- Add the softened butter and mix until just combined.
- Beat in the egg and lemon zest.
- Stir in the lemon juice.
- Pour the batter into the prepared baking dish.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Meringue Topping:
- In a large bowl, beat the egg whites and granulated sugar until stiff peaks form.
- Spread the meringue over the cooled cake layer.
