Lemon Meringue Brownies

Ingredients
For the Brownies:
- 1 cup (200g) dark chocolate chips
- 1/2 cup (100g) unsalted butter
- 1 cup (200g) sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 3/4 cups (220g) all-purpose flour
For the Lemon Curd:
- 1 cup (200g) granulated sugar
- 1/2 cup (120ml) freshly squeezed lemon juice
- 1/4 cup (60g) unsalted butter, softened
- 2 large egg yolks
For the Meringue Topping:
- 3 large egg whites
- 1 cup (200g) granulated sugar
Instructions
Make the Brownies:
- Preheat your oven to 350°F (180°C). Line an 8-inch (20cm) square baking pan with parchment paper.
- In a medium bowl, whisk together flour and salt. Set aside.
- In a large bowl, combine chocolate chips and butter. Melt in the microwave or over a double boiler. Whisk until smooth.
- Add sugar to the melted chocolate mixture and whisk until combined.
- Beat in eggs one at a time, followed by vanilla extract.
- Gradually mix in flour mixture until just combined.
- Pour batter into prepared baking pan and smooth top.
Make the Lemon Curd:
- In a small saucepan, whisk together sugar, lemon juice, and softened butter. Cook over medium heat, stirring constantly, until sugar has dissolved.
- Remove from heat and stir in egg yolks.
- Strain curd into a clean bowl to remove any egg solids.
Make the Meringue Topping:
- In a separate bowl, beat egg whites and granulated sugar until stiff peaks form.
Assemble the Brownies:
- Bake brownie layer for 25-30 minutes or until set.
- Remove from oven and let cool completely in pan.
- Spread lemon curd over cooled brownie layer.
- Top with meringue topping, spreading evenly to cover.
- Return baking pan to preheated oven and bake for an additional 10-15 minutes, or until meringue is golden brown.
