Lemon Meringue Brownies

A refreshing take on the classic brownie, these lemon meringue brownies are perfect for springtime. The tangy lemon curd and fluffy meringue topping add a delightful contrast to the rich, fudgy brownies.

Ingredients

For the Brownies:

  • 1 cup (200g) dark chocolate chips
  • 1/2 cup (100g) unsalted butter
  • 1 cup (200g) sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups (220g) all-purpose flour

For the Lemon Curd:

  • 1 cup (200g) granulated sugar
  • 1/2 cup (120ml) freshly squeezed lemon juice
  • 1/4 cup (60g) unsalted butter, softened
  • 2 large egg yolks

For the Meringue Topping:

  • 3 large egg whites
  • 1 cup (200g) granulated sugar

Instructions

Make the Brownies:

  1. Preheat your oven to 350°F (180°C). Line an 8-inch (20cm) square baking pan with parchment paper.
  2. In a medium bowl, whisk together flour and salt. Set aside.
  3. In a large bowl, combine chocolate chips and butter. Melt in the microwave or over a double boiler. Whisk until smooth.
  4. Add sugar to the melted chocolate mixture and whisk until combined.
  5. Beat in eggs one at a time, followed by vanilla extract.
  6. Gradually mix in flour mixture until just combined.
  7. Pour batter into prepared baking pan and smooth top.

Make the Lemon Curd:

  1. In a small saucepan, whisk together sugar, lemon juice, and softened butter. Cook over medium heat, stirring constantly, until sugar has dissolved.
  2. Remove from heat and stir in egg yolks.
  3. Strain curd into a clean bowl to remove any egg solids.

Make the Meringue Topping:

  1. In a separate bowl, beat egg whites and granulated sugar until stiff peaks form.

Assemble the Brownies:

  1. Bake brownie layer for 25-30 minutes or until set.
  2. Remove from oven and let cool completely in pan.
  3. Spread lemon curd over cooled brownie layer.
  4. Top with meringue topping, spreading evenly to cover.
  5. Return baking pan to preheated oven and bake for an additional 10-15 minutes, or until meringue is golden brown.
