Lemon Blueberry Muffin Tops Crumble Bars

A unique fusion of flavors and textures, these Lemon Blueberry Muffin Tops Crumble Bars will become a new favorite in your household. Inspired by the classic muffin top, these bars are topped with a crunchy streusel crumble, filled with a moist lemon blueberry cake, and finished with a drizzle of powdered sugar.

Ingredients

For the Cake Layer

  • 1 1/2 cups (190g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup (50g) unsalted butter, softened
  • 2 large eggs
  • 2 teaspoons grated lemon zest
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup (120g) fresh or frozen blueberries

For the Streusel Crumble Topping

  • 1/4 cup (50g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (60g) unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 cup (120g) confectioners' sugar

For the Lemon Blueberry Muffin Top Topping

  • 1/2 cup (60g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup (50g) unsalted butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

Make the Cake Layer

  1. Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper or aluminum foil, leaving some overhang for easy removal.
  2. In a medium bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a large bowl, whisk together butter, eggs, lemon zest, lemon juice, and vanilla extract. Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
  4. Gently fold in the blueberries.

Make the Streusel Crumble Topping

  1. In a small bowl, whisk together flour, sugar, and salt.
  2. Add the softened butter and vanilla extract to the dry ingredients. Mix until crumbly.

Assemble the Bars

  1. Press half of the cake mixture into the prepared baking dish.
  2. Top with the streusel crumble topping.
  3. Sprinkle the muffin top topping over the streusel layer.
  4. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.

Make the Muffin Top Topping

  1. In a small bowl, whisk together flour, sugar, baking powder, and salt.
  2. Add the softened butter and vanilla extract to the dry ingredients. Mix until crumbly.
