Ingredients

- 1/4 cup (50g) all-purpose flour
- 1/4 cup (50g) granulated sugar
- 1/2 cup (60g) unsalted butter, softened
- 1 teaspoon vanilla extract
- 1 cup (120g) confectioners' sugar

- 1/2 cup (60g) all-purpose flour
- 1/4 cup (50g) granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup (50g) unsalted butter, softened
- 1 egg
- 1 teaspoon vanilla extract
Instructions
Make the Cake Layer
- Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper or aluminum foil, leaving some overhang for easy removal.
- In a medium bowl, whisk together flour, sugar, baking powder, and salt.
- In a large bowl, whisk together butter, eggs, lemon zest, lemon juice, and vanilla extract. Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
- Gently fold in the blueberries.
Make the Streusel Crumble Topping
- In a small bowl, whisk together flour, sugar, and salt.
- Add the softened butter and vanilla extract to the dry ingredients. Mix until crumbly.
Assemble the Bars
- Press half of the cake mixture into the prepared baking dish.
- Top with the streusel crumble topping.
- Sprinkle the muffin top topping over the streusel layer.
- Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
