Ingredients:

For the muffin batter:

  • 1 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon grated lemon zest

For the blueberry filling:

  • 1 cup fresh or frozen blueberries
  • 2 tablespoons granulated sugar

For the oat crumble topping:

  • 1/2 cup rolled oats
  • 1/4 cup brown sugar
  • 1/4 cup cold unsalted butter, cut into small pieces
  • 1 teaspoon cinnamon

Instructions:

Step 1: Prepare the muffin batter

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a large bowl, using an electric mixer, beat the butter until creamy. Add eggs one at a time, beating well after each addition.
  4. Stir in lemon juice and zest.

Step 2: Combine the muffin batter with dry ingredients

  1. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  2. Do not overmix.

Step 3: Prepare the blueberry filling
