Ingredients

  • 1 cup sweetened condensed milk
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup freshly squeezed lime juice
  • 1 tsp vanilla extract
  • 1/4 cup granulated sugar
  • 3 large egg whites
  • 1 cup heavy cream, whipped
  • 1/2 cup toasted coconut flakes

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Make a pastry dough and roll it out into a circle, about 1/8 inch thick.
  3. Place the dough on a baking sheet lined with parchment paper and chill for 15 minutes.
For the coconut lime mousse:
  1. In a blender or food processor, combine the sweetened condensed milk, unsweetened shredded coconut, lime juice, vanilla extract, and granulated sugar.
  2. Beat until smooth and creamy.
  3. Fold in the whipped heavy cream.
  4. Spoon the coconut lime mixture into pre-baked pastry shells.
To assemble and serve:
  1. Sprinkle toasted coconut flakes on top of the mousse filling.
  2. Chill for at least 30 minutes before serving.
  3. Slice and serve to your guests.
