Coconut and Lime Mousse Tart
Description
A refreshing coconut and lime mousse tart, perfect for warm weather desserts.
Ingredients
- 1 cup sweetened condensed milk
- 1/2 cup unsweetened shredded coconut
- 1/4 cup freshly squeezed lime juice
- 1 tsp vanilla extract
- 1/4 cup granulated sugar
- 3 large egg whites
- 1 cup heavy cream, whipped
- 1/2 cup toasted coconut flakes
Instructions
- Preheat the oven to 350°F (180°C).
- Make a pastry dough and roll it out into a circle, about 1/8 inch thick.
- Place the dough on a baking sheet lined with parchment paper and chill for 15 minutes.
For the coconut lime mousse:
- In a blender or food processor, combine the sweetened condensed milk, unsweetened shredded coconut, lime juice, vanilla extract, and granulated sugar.
- Beat until smooth and creamy.
- Fold in the whipped heavy cream.
- Spoon the coconut lime mixture into pre-baked pastry shells.
To assemble and serve:
- Sprinkle toasted coconut flakes on top of the mousse filling.
- Chill for at least 30 minutes before serving.
- Slice and serve to your guests.
