Coconut Lime Macarons

Description

These delicate French macarons are infused with the brightness of lime and the sweetness of coconut. The perfect combination for a refreshing treat.

Ingredients

  • 1 1/2 cups almond flour
  • 1 1/2 cup powdered sugar
  • 3 large egg whites
  • 1/2 cup unsweetened shredded coconut
  • 1 tsp lime zest
  • 2 tbsp freshly squeezed lime juice
  • Food coloring (optional)

Instructions

Step 1: Prepare the Coconut Meringue

In a medium bowl, mix together the unsweetened shredded coconut and powdered sugar.

Step 2: Make the Macaron Batter

Sift together almond flour and powdered sugar. In a separate bowl, whip egg whites until stiff peaks form. Add food coloring (if using) and lime zest to the egg whites. Gently fold in the coconut mixture into the egg whites. Fold in the sifted almond mixture.

Step 3: Pipe the Macarons

Transfer the batter to a piping bag fitted with a round tip. Pipe small, round circles onto a parchment-lined baking sheet.

Step 4: Allow the Macarons to Rest and Bake

Allow the macarons to rest at room temperature for 30 minutes to an hour to form a skin. Preheat the oven to 300°F (150°C). Bake the macarons for 15-20 minutes or until they are firm to the touch.

Step 5: Prepare the Lime Buttercream

In a medium bowl, whip together powdered sugar and unsalted butter until smooth. Add freshly squeezed lime juice and mix until combined.

Step 6: Assemble the Macarons

Once the macarons are completely cool, pair them up by size. Sandwich a dollop of lime buttercream between two shells.
