Ingredients:
- 1 pound peeled and deveined shrimp
- 2 medium zucchini, diced
- 1/4 cup chopped red onion
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley, for garnish
Instructions:
- Heat olive oil in a large skillet over medium heat. Add red onion and cook until softened, about 5 minutes.
- Stir in garlic and cook for 1 minute more.
- Add zucchini and cook until tender-crisp, about 5 minutes.
- Season with lemon juice, oregano, salt, and pepper.
- Push vegetables to one side of the skillet. Add shrimp and cook until pink and opaque, about 3 minutes per side.
- Stir shrimp into vegetables and serve immediately, garnished with parsley.
