Zesty Shrimp & Zucchini Skillet

A quick and flavorful weeknight dinner featuring succulent shrimp, tender zucchini, and a bright citrus dressing.

Ingredients:

  • 1 pound peeled and deveined shrimp
  • 2 medium zucchini, diced
  • 1/4 cup chopped red onion
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley, for garnish

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add red onion and cook until softened, about 5 minutes.
  2. Stir in garlic and cook for 1 minute more.
  3. Add zucchini and cook until tender-crisp, about 5 minutes.
  4. Season with lemon juice, oregano, salt, and pepper.
  5. Push vegetables to one side of the skillet. Add shrimp and cook until pink and opaque, about 3 minutes per side.
  6. Stir shrimp into vegetables and serve immediately, garnished with parsley.
