Ingredients:
- 1 lb large shrimp, peeled and deveined
- 2 medium zucchinis, cut into 1-inch thick rounds
- 1 red bell pepper, seeded and cut into 1-inch pieces
- 1/4 cup olive oil
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- For the Cilantro Lime Dip:
- 1/2 cup chopped fresh cilantro
- 1/4 cup mayonnaise
- 2 tablespoons lime juice
- 1 clove garlic, minced
- 1/4 teaspoon salt
Instructions:
Prepare the Skewers: Soak 8-10 wooden skewers in water for at least 30 minutes to prevent burning. Thread the shrimp, zucchini rounds, and bell pepper pieces onto the skewers, alternating ingredients.
Marinate (Optional): In a bowl, whisk together olive oil, lemon juice, salt, and pepper. Marinate the skewers in this mixture for 15-20 minutes.
Grill: Preheat your grill to medium heat. Grill the skewers for 2-3 minutes per side, or until the shrimp are pink and cooked through and the vegetables are tender.
Make the Dip: While the skewers are grilling, combine all the dip ingredients in a small bowl. Mix well and adjust seasonings to taste.
Serve: Remove the skewers from the grill and serve them immediately with the cilantro lime dip.
