Zesty Shrimp & Zucchini Skewers with Cilantro Lime Dip

A vibrant and flavorful appetizer or light lunch featuring succulent shrimp and tender zucchini grilled to perfection. Served with a zesty cilantro lime dip for an extra punch of freshness!

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 2 medium zucchinis, cut into 1-inch thick rounds
  • 1 red bell pepper, seeded and cut into 1-inch pieces
  • 1/4 cup olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • For the Cilantro Lime Dip:
    • 1/2 cup chopped fresh cilantro
    • 1/4 cup mayonnaise
    • 2 tablespoons lime juice
    • 1 clove garlic, minced
    • 1/4 teaspoon salt

Instructions:

  1. Prepare the Skewers: Soak 8-10 wooden skewers in water for at least 30 minutes to prevent burning. Thread the shrimp, zucchini rounds, and bell pepper pieces onto the skewers, alternating ingredients.

  2. Marinate (Optional): In a bowl, whisk together olive oil, lemon juice, salt, and pepper. Marinate the skewers in this mixture for 15-20 minutes.

  3. Grill: Preheat your grill to medium heat. Grill the skewers for 2-3 minutes per side, or until the shrimp are pink and cooked through and the vegetables are tender.

  4. Make the Dip: While the skewers are grilling, combine all the dip ingredients in a small bowl. Mix well and adjust seasonings to taste.

  5. Serve: Remove the skewers from the grill and serve them immediately with the cilantro lime dip.
