Tres Leches Cake Sandwich Cookies

A twist on traditional tres leches cake, these cookies sandwich a moist and creamy sponge soaked in three types of milk.

Tres Leches Cake Sandwich Cookies

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup whole milk
  • 1 tsp pure vanilla extract
  • 1 cup tres leches mixture (see below)
  • Confectioners' sugar for dusting

Tres Leches Mixture:

  • 1 can evaporated milk
  • 1 can sweetened condensed milk
  • 1 cup heavy cream

Instructions

Make the Sponge Cake

  1. Preheat oven to 350°F.
  2. In a medium bowl, whisk together flour and baking powder.
  3. In a large mixing bowl, combine butter, sugar, milk, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Pour into a lined baking sheet and bake for 15-20 minutes or until golden brown.

Make the Tres Leches Mixture

  1. Whisk together all three types of milk in a separate bowl.

Assemble the Sandwich Cookies

  1. Allow the sponge cake to cool completely before cutting it into desired shapes.
  2. Spoon a dollop of tres leches mixture onto one half of each cookie shape, then top with another identical half.
  3. Dust with confectioners' sugar and serve.
