Tres Leches Cake Sandwich Cookies
Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/2 cup whole milk
- 1 tsp pure vanilla extract
- 1 cup tres leches mixture (see below)
- Confectioners' sugar for dusting
Tres Leches Mixture:
- 1 can evaporated milk
- 1 can sweetened condensed milk
- 1 cup heavy cream
Instructions
Make the Sponge Cake
- Preheat oven to 350°F.
- In a medium bowl, whisk together flour and baking powder.
- In a large mixing bowl, combine butter, sugar, milk, and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Pour into a lined baking sheet and bake for 15-20 minutes or until golden brown.
Make the Tres Leches Mixture
- Whisk together all three types of milk in a separate bowl.
Assemble the Sandwich Cookies
- Allow the sponge cake to cool completely before cutting it into desired shapes.
- Spoon a dollop of tres leches mixture onto one half of each cookie shape, then top with another identical half.
- Dust with confectioners' sugar and serve.
Note: This recipe uses a traditional Tres Leches Cake as the filling for sandwich cookies. The cake is soaked in three types of milk (evaporated milk, sweetened condensed milk, and heavy cream), which creates a moist and creamy sponge that's perfect for these cookies!
