Ingredients:
- 1 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 tablespoon soy sauce
- 1 teaspoon chili powder
- ½ teaspoon ground cumin
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 ripe mango, diced
- ½ red onion, finely chopped
- ½ cup chopped cilantro
- 2 tablespoons lime juice
- Salt and pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions:
- In a medium bowl, whisk together olive oil, honey, soy sauce, chili powder, cumin, salt, and pepper.
- Add shrimp to the marinade and toss to coat. Marinate for at least 30 minutes (or up to 4 hours in the refrigerator).
- Preheat grill to medium-high heat.
- Thread marinated shrimp onto skewers. Grill for 2-3 minutes per side, or until pink and cooked through.
- While shrimp is grilling, combine mango, red onion, cilantro, and lime juice in a bowl. Season with salt and pepper to taste.
- Serve grilled shrimp skewers hot, topped with the refreshing mango salsa.
