Sweet & Spicy Salmon Bowls with Mango Salsa

A vibrant and healthy meal featuring pan-seared salmon drizzled with a sweet chili glaze, served on a bed of fluffy rice with a refreshing mango salsa.

Yields: 4 servings Prep time: 20 minutes Cook time: 15 minutes

Ingredients:

  • 1 pound salmon fillets
  • 1 tablespoon olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sriracha (or more to taste)
  • 1 cup cooked rice
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup chopped cilantro
  • 1 jalapeño pepper, seeded and minced (optional)
  • 1 lime, juiced

Instructions:

  1. In a small bowl, whisk together the olive oil, soy sauce, honey, and sriracha. Set aside.
  2. Heat a large skillet over medium-high heat. Add the salmon fillets to the hot skillet and cook for 4-5 minutes per side, or until cooked through. Brush with the prepared glaze during the last minute of cooking.
  3. While the salmon cooks, prepare the mango salsa by combining the diced mango, red onion, cilantro, jalapeño (if using), and lime juice in a bowl. Season with salt and pepper to taste.
  4. Divide the cooked rice among four bowls. Top with a salmon fillet and serve immediately with the mango salsa.
