Ingredients:
- 1 pound salmon fillets
- 1 tablespoon olive oil
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 teaspoon sriracha (or more to taste)
- 1 cup cooked rice
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1/4 cup chopped cilantro
- 1 jalapeño pepper, seeded and minced (optional)
- 1 lime, juiced
Instructions:
- In a small bowl, whisk together the olive oil, soy sauce, honey, and sriracha. Set aside.
- Heat a large skillet over medium-high heat. Add the salmon fillets to the hot skillet and cook for 4-5 minutes per side, or until cooked through. Brush with the prepared glaze during the last minute of cooking.
- While the salmon cooks, prepare the mango salsa by combining the diced mango, red onion, cilantro, jalapeño (if using), and lime juice in a bowl. Season with salt and pepper to taste.
- Divide the cooked rice among four bowls. Top with a salmon fillet and serve immediately with the mango salsa.
