Sweet and Savory Salmon with Pistachio-Basil Crust

A flavorful and elegant dish that combines the richness of salmon with a vibrant pistachio-basil crust.

Ingredients:

  • 4 Salmon fillets (6 oz each)
  • 1/2 cup shelled pistachios
  • 1/4 cup fresh basil leaves, finely chopped
  • 1 tablespoon olive oil
  • 1 lemon, zested and juiced
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a food processor, combine pistachios, basil, olive oil, lemon zest, garlic, oregano, salt, and pepper. Pulse until a coarse paste forms.
  3. Place salmon fillets on the prepared baking sheet. Pat dry with paper towels.
  4. Spread the pistachio-basil mixture evenly over each salmon fillet.
  5. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  6. Serve immediately with a squeeze of fresh lemon juice.
