Ingredients:
- 4 Salmon fillets (6 oz each)
- 1/2 cup shelled pistachios
- 1/4 cup fresh basil leaves, finely chopped
- 1 tablespoon olive oil
- 1 lemon, zested and juiced
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper to taste
Instructions:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a food processor, combine pistachios, basil, olive oil, lemon zest, garlic, oregano, salt, and pepper. Pulse until a coarse paste forms.
- Place salmon fillets on the prepared baking sheet. Pat dry with paper towels.
- Spread the pistachio-basil mixture evenly over each salmon fillet.
- Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Serve immediately with a squeeze of fresh lemon juice.
