Sunshine Salmon with Coconut-Mango Salsa

A vibrant and flavorful dish featuring pan-seared salmon topped with a refreshing coconut-mango salsa. Perfect for a light and healthy dinner.

Ingredients:

  • 2 salmon fillets (6 oz each)
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1 ripe mango, diced
  • 1/2 cup shredded red cabbage
  • 1/4 cup chopped cilantro
  • 1 jalapeño, finely minced (seeds removed for less heat)
  • 1/4 cup coconut milk
  • 1 tablespoon lime juice

Instructions:

  1. Pat the salmon fillets dry with paper towels and season generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the salmon fillets to the hot pan and cook for 3-4 minutes per side, or until cooked through and flaky.
  3. While the salmon is cooking, prepare the salsa: Combine diced mango, red cabbage, cilantro, jalapeño, coconut milk, and lime juice in a bowl. Season with salt and pepper to taste.
  4. Once the salmon is cooked, transfer it to serving plates. Top each fillet generously with the coconut-mango salsa.
  5. Serve immediately and enjoy!
