Ingredients:
- 2 salmon fillets (6 oz each)
- 1 tablespoon olive oil
- Salt and black pepper to taste
- 1 ripe mango, diced
- 1/2 cup shredded red cabbage
- 1/4 cup chopped cilantro
- 1 jalapeño, finely minced (seeds removed for less heat)
- 1/4 cup coconut milk
- 1 tablespoon lime juice
Instructions:
- Pat the salmon fillets dry with paper towels and season generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the salmon fillets to the hot pan and cook for 3-4 minutes per side, or until cooked through and flaky.
- While the salmon is cooking, prepare the salsa: Combine diced mango, red cabbage, cilantro, jalapeño, coconut milk, and lime juice in a bowl. Season with salt and pepper to taste.
- Once the salmon is cooked, transfer it to serving plates. Top each fillet generously with the coconut-mango salsa.
- Serve immediately and enjoy!
