Ingredients:
- 4 Salmon filets (6 oz each)
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- ½ teaspoon ground coriander
- Salt and black pepper to taste
- 8 corn tortillas
- For the Mango Salsa:
- 1 ripe mango, diced
- ½ red onion, finely chopped
- 1 jalapeño pepper, seeded and minced (adjust to your spice preference)
- ¼ cup chopped fresh cilantro
- Juice of 1 lime
- Pinch of salt
Instructions:
Prepare the Salsa: Combine mango, red onion, jalapeño, cilantro, lime juice, and salt in a bowl. Gently toss to combine. Set aside.
Season the Salmon: Pat salmon filets dry and season generously with cumin, coriander, salt, and pepper.
Sear the Salmon: Heat olive oil in a skillet over medium-high heat. Add salmon filets and sear for 3-4 minutes per side, or until cooked through and flaky.
Warm the Tortillas: Briefly warm tortillas in a dry skillet or microwave until pliable.
Assemble Tacos: Fill each tortilla with a piece of seared salmon and top generously with mango salsa.
