Sunset Salmon Tacos with Avocado Crema

Flavorful and vibrant, these tacos are perfect for a quick weeknight dinner. The salmon is marinated in a zesty blend of spices, then pan-seared to perfection. Creamy avocado crema adds a cool contrast, while fresh cilantro and lime juice brighten up every bite.

Ingredients:

  • 4 salmon filets (6 oz each)
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 corn tortillas
  • 1 ripe avocado, mashed
  • 1/4 cup sour cream or Greek yogurt
  • 1 tablespoon cilantro, chopped
  • 1 lime, juiced
  • Pinch of salt

Instructions:

  1. In a bowl, whisk together olive oil, lime juice, cumin, paprika, salt, and pepper.
  2. Place salmon filets in the marinade, making sure to coat both sides. Marinate for at least 10 minutes.
  3. Heat a large skillet over medium-high heat. Add marinated salmon and cook for 3-4 minutes per side, or until cooked through.
  4. While salmon cooks, prepare the avocado crema by mashing avocado in a bowl. Stir in sour cream or yogurt, chopped cilantro, lime juice, and salt.
  5. Warm tortillas in a microwave or on a griddle.
  6. To assemble tacos: place a warm tortilla on a plate, top with cooked salmon, avocado crema, and any desired toppings (such as shredded cabbage, diced tomatoes, or pickled onions). Serve immediately and enjoy!
