Ingredients:
- 4 salmon filets (6 oz each)
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 corn tortillas
- 1 ripe avocado, mashed
- 1/4 cup sour cream or Greek yogurt
- 1 tablespoon cilantro, chopped
- 1 lime, juiced
- Pinch of salt
Instructions:
- In a bowl, whisk together olive oil, lime juice, cumin, paprika, salt, and pepper.
- Place salmon filets in the marinade, making sure to coat both sides. Marinate for at least 10 minutes.
- Heat a large skillet over medium-high heat. Add marinated salmon and cook for 3-4 minutes per side, or until cooked through.
- While salmon cooks, prepare the avocado crema by mashing avocado in a bowl. Stir in sour cream or yogurt, chopped cilantro, lime juice, and salt.
- Warm tortillas in a microwave or on a griddle.
- To assemble tacos: place a warm tortilla on a plate, top with cooked salmon, avocado crema, and any desired toppings (such as shredded cabbage, diced tomatoes, or pickled onions). Serve immediately and enjoy!
