Sunset Salmon Skewers with Honey-Lime Glaze

A vibrant and flavorful dish perfect for summer gatherings. Grilled salmon skewers are coated in a sweet and tangy honey-lime glaze, bursting with citrusy goodness and a hint of warmth.

Ingredients:

  • 1 lb salmon fillet, cut into 1-inch cubes
  • 1/4 cup honey
  • 1/4 cup lime juice
  • 1 tablespoon olive oil
  • 1 tablespoon chopped cilantro
  • 1 teaspoon grated ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 wooden skewers, soaked in water for 30 minutes

Instructions:

  1. In a bowl, whisk together honey, lime juice, olive oil, cilantro, ginger, salt, and pepper.
  2. Add the salmon cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes (or up to 4 hours).
  3. Preheat grill to medium-high heat.
  4. Thread marinated salmon onto skewers.
  5. Grill skewers for 3-4 minutes per side, or until salmon is cooked through and flakes easily with a fork.
  6. Serve immediately with your favorite grilled vegetables or rice pilaf.
