Ingredients:
- 1 lb salmon fillet, cut into 1-inch cubes
- 1/4 cup honey
- 1/4 cup lime juice
- 1 tablespoon olive oil
- 1 tablespoon chopped cilantro
- 1 teaspoon grated ginger
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 wooden skewers, soaked in water for 30 minutes
Instructions:
- In a bowl, whisk together honey, lime juice, olive oil, cilantro, ginger, salt, and pepper.
- Add the salmon cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes (or up to 4 hours).
- Preheat grill to medium-high heat.
- Thread marinated salmon onto skewers.
- Grill skewers for 3-4 minutes per side, or until salmon is cooked through and flakes easily with a fork.
- Serve immediately with your favorite grilled vegetables or rice pilaf.
