Sunset Saffron Crème Brûlée

A rich and creamy saffron-infused crème brûlée, topped with a caramelized sugar crust and edible gold dust.

Sunset Saffron Crème Brûlée

Ingredients

  • 3 cups heavy cream
  • 1 cup granulated sugar
  • 1/2 teaspoon saffron threads, soaked in 1 tablespoon hot water
  • 1/4 teaspoon kosher salt
  • 1/2 cup whole milk
  • 1/4 cup unsalted butter, melted
  • 2 large egg yolks
  • Edible gold dust (optional)

Instructions

Step 1: Preheat the Oven and Prepare the Ramekins

Preheat the oven to 300°F (150°C). Butter six 6-ounce ramekins and coat with granulated sugar.

Step 2: Infuse the Cream with Saffron

In a medium saucepan, combine the heavy cream, saffron threads and their soaking liquid, and kosher salt. Heat over medium heat, stirring occasionally, until the mixture is hot but not boiling.

Step 3: Make the Crème Brûlée Base

In a separate bowl, whisk together the whole milk, melted butter, and egg yolks. Temper the egg yolk mixture by slowly pouring the warm cream mixture into it, whisking constantly to prevent scrambling the eggs.

Step 4: Strain and Pour the Mixture into Ramekins

Strain the crème brûlée base through a fine-mesh sieve into a clean bowl. Pour the mixture into the prepared ramekins, filling them about 3/4 of the way full.

Step 5: Bake and Chill the Crème Brûlée

Place the ramekins in a large baking dish and add hot water to come halfway up the sides. Bake for 25-30 minutes or until set but still slightly jiggly in the center. Remove from the oven and let cool to room temperature. Cover with plastic wrap and refrigerate for at least 2 hours or overnight.

Step 6: Caramelize the Sugar and Add Edible Gold Dust (Optional)

Just before serving, sprinkle a thin layer of granulated sugar over the top of each chilled crème brûlée. Using a kitchen torch, caramelize the sugar until golden brown. If desired, sprinkle with edible gold dust for added luxury.

  • For an extra-rich treat, serve the Sunset Saffron Crème Brûlée with a side of toasted almonds or crispy wafer cookies.
  • Experiment with different flavors by substituting the saffron with other herbs like lavender or basil.
