Sunrise Salmon Skillet
Yields: 2 Servings Prep Time: 10 minutes Cook Time: 15 minutes
Ingredients:
- 2 salmon fillets (6 oz each)
- 1 tablespoon olive oil
- 1/2 red bell pepper, sliced
- 1/4 cup chopped onion
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill, chopped
- Salt and black pepper to taste
Instructions:
- Heat the olive oil in a large skillet over medium heat.
- Add the red bell pepper and onion and cook for 5 minutes, until softened. Stir in the garlic and cook for 1 minute more.
- Season the salmon fillets with salt and black pepper. Place them in the skillet alongside the vegetables.
- Cook the salmon for 4-6 minutes per side, or until cooked through.
- Remove the salmon from the skillet and set aside.
- In a small bowl, whisk together the lemon juice, dill, salt, and black pepper.
- Pour the sauce over the vegetables in the skillet and cook for 1 minute, to heat through.
- Return the salmon to the skillet and spoon the sauce over the top. Serve immediately.
