Sunrise Salmon Skillet

A quick and flavorful skillet meal featuring salmon, bell peppers, and a vibrant lemon-dill sauce. Perfect for a weeknight dinner!

Sunrise Salmon Skillet

Yields: 2 Servings Prep Time: 10 minutes Cook Time: 15 minutes

Ingredients:

  • 2 salmon fillets (6 oz each)
  • 1 tablespoon olive oil
  • 1/2 red bell pepper, sliced
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • Salt and black pepper to taste

Instructions:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the red bell pepper and onion and cook for 5 minutes, until softened. Stir in the garlic and cook for 1 minute more.
  3. Season the salmon fillets with salt and black pepper. Place them in the skillet alongside the vegetables.
  4. Cook the salmon for 4-6 minutes per side, or until cooked through.
  5. Remove the salmon from the skillet and set aside.
  6. In a small bowl, whisk together the lemon juice, dill, salt, and black pepper.
  7. Pour the sauce over the vegetables in the skillet and cook for 1 minute, to heat through.
  8. Return the salmon to the skillet and spoon the sauce over the top. Serve immediately.
