Sunrise Salmon Bowl

A vibrant and healthy breakfast bowl packed with protein, flavor, and a touch of sweetness.

Ingredients:

  • 1 tbsp olive oil
  • 1/2 cup chopped red onion
  • 1 clove garlic, minced
  • 1/4 cup chopped fresh cilantro
  • 1 tsp cumin powder
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 lb salmon fillet, skin removed and cut into 1-inch pieces
  • 1 cup cooked quinoa
  • 1/2 avocado, diced
  • 1/4 cup crumbled feta cheese
  • Juice of 1/2 lime

Instructions:

  1. Heat olive oil in a skillet over medium heat. Add onion and cook until softened, about 5 minutes. Stir in garlic, cilantro, cumin, paprika, salt, and pepper. Cook for 1 minute more.
  2. Add salmon to the skillet and cook until browned and flaky, about 4-5 minutes per side.
  3. Divide quinoa between two bowls. Top with cooked salmon mixture, avocado, feta cheese, and a drizzle of lime juice.
