Ingredients:
- 1 tbsp olive oil
- 1/2 cup chopped red onion
- 1 clove garlic, minced
- 1/4 cup chopped fresh cilantro
- 1 tsp cumin powder
- 1/2 tsp paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 lb salmon fillet, skin removed and cut into 1-inch pieces
- 1 cup cooked quinoa
- 1/2 avocado, diced
- 1/4 cup crumbled feta cheese
- Juice of 1/2 lime
Instructions:
- Heat olive oil in a skillet over medium heat. Add onion and cook until softened, about 5 minutes. Stir in garlic, cilantro, cumin, paprika, salt, and pepper. Cook for 1 minute more.
- Add salmon to the skillet and cook until browned and flaky, about 4-5 minutes per side.
- Divide quinoa between two bowls. Top with cooked salmon mixture, avocado, feta cheese, and a drizzle of lime juice.
