Ingredients:
- 2 salmon fillets (6 ounces each)
- 1 tablespoon olive oil
- Salt and black pepper to taste
- 1 large sweet potato, peeled and diced
- 1/2 red onion, finely chopped
- 1 jalapeño pepper, seeded and minced
- 1/4 cup chopped cilantro
- 2 tablespoons lime juice
- 1 tablespoon honey
Instructions:
Preheat oven to 400°F (200°C). Toss diced sweet potato with olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and slightly caramelized.
While the sweet potatoes are roasting, heat olive oil in a large skillet over medium-high heat. Season salmon fillets with salt and pepper. Cook for 3-4 minutes per side, or until cooked through and flaky.
In a bowl, combine roasted sweet potato, red onion, jalapeño, cilantro, lime juice, and honey. Mash lightly to create a chunky salsa.
Serve salmon topped with the sweet potato salsa.
