Ingredients:
- 2 Salmon filets (6 oz each)
- 2 Large sweet potatoes, peeled and sliced into 1/2-inch rounds
- 2 tbsp Olive oil
- 1 tsp Salt
- 1/2 tsp Black pepper
- 1/4 cup Fresh cilantro, chopped
- 2 tbsp Lime juice
- 1 tbsp Honey
- 1 tbsp Water
Instructions:
- Preheat oven to 400°F (200°C). Toss sweet potato rounds with 1 tbsp olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and slightly browned.
- While the sweet potatoes roast, whisk together the remaining olive oil, cilantro, lime juice, honey, and water in a small bowl to make the dressing.
- Place salmon filets on a separate baking sheet lined with parchment paper. Season with salt and pepper. Bake for 12-15 minutes, or until cooked through.
- Arrange roasted sweet potato rounds on plates and top with baked salmon. Drizzle generously with cilantro-lime dressing and serve immediately.
