Sun-Kissed Salmon with Roasted Peach Salsa

A vibrant and flavorful dish featuring succulent salmon topped with a sweet and tangy peach salsa.

Ingredients:

  • 1 lb salmon fillet
  • 1 ripe peach, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño pepper, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C).

  2. In a bowl, combine the diced peach, red onion, jalapeño, cilantro, lime juice, olive oil, salt, and pepper. Mix well.

  3. Place the salmon fillet on a baking sheet lined with parchment paper.

  4. Top the salmon with the peach salsa.

  5. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

  6. Serve immediately.
