Ingredients:
- 1 lb salmon fillet
- 1 ripe peach, diced
- 1/2 red onion, finely chopped
- 1 jalapeño pepper, seeded and minced
- 1/4 cup fresh cilantro, chopped
- 2 tbsp lime juice
- 1 tbsp olive oil
- Salt and black pepper to taste
Instructions:
Preheat oven to 400°F (200°C).
In a bowl, combine the diced peach, red onion, jalapeño, cilantro, lime juice, olive oil, salt, and pepper. Mix well.
Place the salmon fillet on a baking sheet lined with parchment paper.
Top the salmon with the peach salsa.
Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Serve immediately.
