Ingredients:
- 1 pound salmon fillet, skin on or off
- 1 cup quinoa, rinsed
- 2 cups water
- 1/4 cup chopped fresh cilantro
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 red onion, thinly sliced
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place the salmon fillet on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper.
- In a medium saucepan, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed.
- While the quinoa cooks, combine cilantro and lime juice in a small bowl.
- Fluff cooked quinoa with a fork and stir in the cilantro-lime mixture. Season with salt and pepper to taste.
- Bake salmon for 12-15 minutes, or until cooked through and flaky.
- Serve the salmon topped with the cilantro-lime quinoa and sliced red onion.
