Sun-Kissed Salmon with Cilantro-Lime Quinoa

A vibrant and healthy dish that combines succulent salmon with a zesty cilantro-lime quinoa for a flavor explosion.

Ingredients:

  • 1 pound salmon fillet, skin on or off
  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 red onion, thinly sliced

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place the salmon fillet on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper.
  3. In a medium saucepan, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed.
  4. While the quinoa cooks, combine cilantro and lime juice in a small bowl.
  5. Fluff cooked quinoa with a fork and stir in the cilantro-lime mixture. Season with salt and pepper to taste.
  6. Bake salmon for 12-15 minutes, or until cooked through and flaky.
  7. Serve the salmon topped with the cilantro-lime quinoa and sliced red onion.
