Stuffed Salmon with Lemon-Herb Butter and Roasted Green Beans

A light and flavorful dish featuring salmon fillets stuffed with a fragrant lemon-herb butter mixture and roasted alongside vibrant green beans.

Ingredients:

  • 2 salmon filets (about 6 ounces each)
  • 1/4 cup unsalted butter, softened
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh dill
  • 1 teaspoon minced garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound green beans, trimmed

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, combine softened butter, lemon juice, parsley, dill, garlic, salt, and pepper. Mix well until thoroughly combined.
  3. Place the salmon filets on the prepared baking sheet. Carefully make a slit lengthwise down the center of each filet, without cutting all the way through.
  4. Spoon the lemon-herb butter mixture evenly into the slits of the salmon.
  5. Toss the green beans with olive oil, salt, and pepper in a separate bowl. Arrange the green beans around the salmon on the baking sheet.
  6. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the green beans are tender-crisp.
  7. Serve immediately, garnished with additional fresh parsley if desired.
