Ingredients:
- 2 salmon filets (about 6 ounces each)
- 1/4 cup unsalted butter, softened
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh dill
- 1 teaspoon minced garlic
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound green beans, trimmed
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, combine softened butter, lemon juice, parsley, dill, garlic, salt, and pepper. Mix well until thoroughly combined.
- Place the salmon filets on the prepared baking sheet. Carefully make a slit lengthwise down the center of each filet, without cutting all the way through.
- Spoon the lemon-herb butter mixture evenly into the slits of the salmon.
- Toss the green beans with olive oil, salt, and pepper in a separate bowl. Arrange the green beans around the salmon on the baking sheet.
- Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the green beans are tender-crisp.
- Serve immediately, garnished with additional fresh parsley if desired.
