Strawberry and White Chocolate Crumble Bars

A sweet and tangy twist on traditional apple crumble bars, featuring fresh strawberries and white chocolate.

Strawberry and White Chocolate Crumble Bars

Ingredients:

  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup white chocolate chips
  • 1 tablespoon vanilla extract

Crumble Topping:

  • 1 1/2 cups rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Instructions:

Preheat oven to 375°F (190°C). Line an 8-inch square baking dish with parchment paper.

In a medium bowl, whisk together the sliced strawberries, granulated sugar, cornstarch, and flour. Let it sit for about 15 minutes until the strawberries start to release their juice.

In a separate large bowl, whisk together the melted butter, white chocolate chips, and vanilla extract.

Add the strawberry mixture to the wet ingredients and stir until well combined.

Pour the strawberry mixture into the prepared baking dish.

To make the crumble topping, combine the oats, brown sugar, cold butter, cinnamon, and nutmeg in a separate bowl. Mix until it resembles coarse crumbs.

Evenly sprinkle the crumble topping over the strawberry mixture.

Bake for 40-45 minutes or until the top is golden brown and the filling is bubbly.

Remove from the oven and let cool completely before cutting into bars and serving.
