Strawberry and Balsamic Crème Brûlée Bars

** Servings: 9-12 **

Ingredients:

Crust:

  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup confectioners' sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened

Filling:

  • 2 cups heavy cream
  • 1 cup granulated sugar
  • 1 tablespoon balsamic glaze
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup sliced strawberries

Instructions:

  1. Make the crust: Preheat your oven to 350°F (180°C). In a medium bowl, whisk together the flour, granulated sugar, confectioners' sugar, and salt. Add the softened butter and mix until a crumbly dough forms.
  2. Press the crust: Press the dough into the bottom of a 9x13-inch baking dish.
  3. Bake the crust: Bake for 20-25 minutes or until lightly golden brown.
  4. Make the filling: In a large bowl, whisk together the heavy cream, granulated sugar, balsamic glaze, egg yolks, and vanilla extract.
  5. Pour in the filling: Pour the filling over the baked crust.
  6. Top with strawberries: Arrange the sliced strawberries on top of the filling.
  7. Bake again: Bake for an additional 25-30 minutes or until the filling is set and the top is lightly golden brown.
  8. Chill and caramelize sugar: Let cool completely, then refrigerate for at least 2 hours. Just before serving, sprinkle a thin layer of granulated sugar over the top and caramelize with a kitchen torch.

Tips:

  • Use high-quality balsamic glaze for the best flavor.
  • Don't overmix the filling, as it can become too thick.
  • Caramelize the sugar just before serving to get the perfect crunch.
