Strawberry and Balsamic Cheesecake Bars
Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/4 cup melted unsalted butter
- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup strawberry jam
- 1/4 cup balsamic glaze
Instructions:
Preheat the oven to 350°F (180°C).
In a medium bowl, mix together the graham cracker crumbs and sugar.
Add the melted butter and stir until well combined.
Press the mixture into the bottom of a 9x9 inch baking dish.
Bake for 10 minutes.
In a large mixing bowl, beat the cream cheese until smooth.
Gradually add the granulated sugar and beat until combined.
Beat in the eggs one at a time, followed by the vanilla extract.
Stir in the strawberry jam.
Pour the cheesecake mixture over the baked crust.
Bake for 25-30 minutes or until the edges are set.
Allow the cheesecake to cool completely on a wire rack.
Once cooled, drizzle with balsamic glaze and top with sliced strawberries.
