Strawberry Shortcake Tiramisu
Ingredients
- 12 ladyfingers
- 1 cup of strong brewed coffee
- 8 ounces mascarpone cheese
- 1/2 cup granulated sugar
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 1 cup sliced strawberries
- 1 cup whipped cream

Instructions
Prepare the Coffee Soak
- In a small bowl, combine the brewed coffee and sugar. Stir until the sugar dissolves.
- Set aside to cool.
Assemble the Tiramisu
- In a large mixing bowl, combine the mascarpone cheese, egg yolks, and vanilla extract. Beat with an electric mixer on high speed until stiff peaks form.
- Dip each ladyfinger into the coffee mixture for about 3-5 seconds on each side. They should be soft and pliable but not too wet.
Layer the Tiramisu
- In a large serving dish, create a layer of ladyfingers. You may need to trim them to fit the dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Top with sliced strawberries and whipped cream.
- Repeat the layers: ladyfingers, mascarpone mixture, strawberries, and whipped cream.
Dust and Serve
- Dust the top of the tiramisu with confectioners' sugar.
- Cover with plastic wrap and refrigerate for at least 3 hours or overnight to allow the flavors to meld together.
- Slice into individual servings and serve chilled.
