Strawberry Shortcake Tiramisu

Ingredients

  • 12 ladyfingers
  • 1 cup of strong brewed coffee
  • 8 ounces mascarpone cheese
  • 1/2 cup granulated sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup sliced strawberries
  • 1 cup whipped cream
  • Confectioners' sugar, for dusting

Instructions

Prepare the Coffee Soak

  1. In a small bowl, combine the brewed coffee and sugar. Stir until the sugar dissolves.
  2. Set aside to cool.

Assemble the Tiramisu

  1. In a large mixing bowl, combine the mascarpone cheese, egg yolks, and vanilla extract. Beat with an electric mixer on high speed until stiff peaks form.
  2. Dip each ladyfinger into the coffee mixture for about 3-5 seconds on each side. They should be soft and pliable but not too wet.

Layer the Tiramisu

  1. In a large serving dish, create a layer of ladyfingers. You may need to trim them to fit the dish.
  2. Spread half of the mascarpone mixture over the ladyfingers.
  3. Top with sliced strawberries and whipped cream.
  4. Repeat the layers: ladyfingers, mascarpone mixture, strawberries, and whipped cream.

Dust and Serve

  1. Dust the top of the tiramisu with confectioners' sugar.
  2. Cover with plastic wrap and refrigerate for at least 3 hours or overnight to allow the flavors to meld together.
  3. Slice into individual servings and serve chilled.
