A creative twist on the classic strawberry shortcake, now in bar form with a crunchy oat topping.
Ingredients
- 2 1/4 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup unsalted butter, softened
- 2 large eggs
- 3 cups sliced strawberries
- 1 cup rolled oats
- 1/2 cup granulated sugar
Instructions
- Preheat oven to 375°F (190°C). Line an 8-inch square baking dish with parchment paper.
- In a medium bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and salt. Add softened butter; mix until a crumbly mixture forms. Press half of the mixture into prepared pan.
- Arrange sliced strawberries on top of crust.
- Sprinkle remaining crumb mixture over strawberries.
- Bake for 40-45 minutes or until topping is golden brown and fruit is bubbly.
- Let cool completely in pan before cutting into bars.
