Ingredients:

For the crust:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup confectioners' sugar
  • 1/2 cup unsalted butter, softened

For the filling:

  • 2 cups sliced strawberries
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped pistachios

For the crumble topping:

  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/4 cup confectioners' sugar
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1 teaspoon cinnamon

Instructions:

  1. Preheat oven to 375°F (190°C). Line an 8-inch square baking dish with parchment paper.
  2. Prepare the crust: In a medium bowl, whisk together flour, granulated sugar, and confectioners' sugar. Add softened butter; use a pastry blender or fingers to work it into the dry ingredients until crumbly. Press mixture evenly into prepared baking dish.
  3. Bake the crust: 18-20 minutes, or until golden brown.
  4. Prepare the filling: In a separate medium bowl, whisk together sliced strawberries and granulated sugar. Add cornstarch; stir until combined. Stir in vanilla extract and chopped pistachios.
  5. Assemble the bars: Spread prepared strawberry mixture evenly over baked crust.
  6. Prepare the crumble topping: In another small bowl, combine oats, brown sugar, confectioners' sugar, cold butter, and cinnamon; mix until crumbly.
  7. Top with crumble topping: Evenly spread crumb mixture over strawberry filling.
  8. Bake the bars: 25-30 minutes or until golden brown on top and bubbly in the center.
