Strawberry Pistachio Crumble Bars

Ingredients:
For the crust:

For the filling:
- 2 cups sliced strawberries
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1/4 cup chopped pistachios
For the crumble topping:
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/4 cup confectioners' sugar
- 1/2 cup cold unsalted butter, cut into small pieces
- 1 teaspoon cinnamon
Instructions:
- Preheat oven to 375°F (190°C). Line an 8-inch square baking dish with parchment paper.
- Prepare the crust: In a medium bowl, whisk together flour, granulated sugar, and confectioners' sugar. Add softened butter; use a pastry blender or fingers to work it into the dry ingredients until crumbly. Press mixture evenly into prepared baking dish.
- Bake the crust: 18-20 minutes, or until golden brown.
- Prepare the filling: In a separate medium bowl, whisk together sliced strawberries and granulated sugar. Add cornstarch; stir until combined. Stir in vanilla extract and chopped pistachios.
- Assemble the bars: Spread prepared strawberry mixture evenly over baked crust.
- Prepare the crumble topping: In another small bowl, combine oats, brown sugar, confectioners' sugar, cold butter, and cinnamon; mix until crumbly.
- Top with crumble topping: Evenly spread crumb mixture over strawberry filling.
- Bake the bars: 25-30 minutes or until golden brown on top and bubbly in the center.
