Strawberry Panna Cotta Mille-Feuille

Ingredients
For the Pastry Cream:
- 1 cup (200g) milk
- 1/2 cup (100g) heavy cream
- 3 tablespoons cornstarch
- 1 tablespoon unsalted butter
- 1 teaspoon vanilla extract
- 1/4 cup (50g) granulated sugar
For the Strawberry Panna Cotta:
- 1 cup (200g) fresh strawberries, hulled and sliced
- 1 cup (240ml) heavy cream
- 2 tablespoons granulated sugar
- 1 tablespoon honey
- 1 teaspoon vanilla extract
Assembly:
- Confectioners' sugar
- Fresh strawberries, sliced
- Whipped cream (optional)
Instructions
Make the Pastry Cream:
- In a medium saucepan, combine milk, heavy cream, and cornstarch. Cook over medium heat, whisking constantly, until thickened.
- Remove from heat and stir in butter, vanilla extract, and sugar.
Make the Strawberry Panna Cotta:
- In a blender or food processor, puree strawberries with 1 tablespoon of honey until smooth.
- In a separate bowl, whip heavy cream until stiff peaks form.
- Fold whipped cream into strawberry mixture until combined.
Assemble the Mille-Feuille:
- On a serving plate or cake stand, create a layer of pastry cream.
- Top with a layer of strawberry panna cotta.
- Repeat layers two more times, finishing with a layer of pastry cream on top.
- Dust with confectioners' sugar and serve immediately.
Tips
- To ensure the mille-feuille stays fresh, assemble just before serving.
- For an added touch, drizzle with honey or sprinkle with chopped fresh strawberries.
