Introduction

These individual strawberry mousse cakes are the perfect treat for spring. The combination of sweet and tangy flavors, paired with the crunch of a buttery shortbread crust and the freshness of mint leaves, will make you feel like you're celebrating a special occasion.

Ingredients

For the Shortbread Crust:

  • 1 1/2 sticks (6 tablespoons) unsalted butter, softened
  • 1/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt

For the Strawberry Mousse:

  • 1 cup hulled and sliced strawberries
  • 8 ounces mascarpone cheese
  • 1 tablespoon granulated sugar
  • 1 tablespoon honey
  • 1/4 teaspoon kosher salt
  • 1 cup heavy cream, whipped
  • Fresh mint leaves for garnish

Instructions

Make the Shortbread Crust:

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour and salt. Add the softened butter and mix until a dough forms.
  3. Roll out the dough on a lightly floured surface to about 1/4 inch thickness. Cut into desired shapes using a cookie cutter or the rim of a glass.
  4. Place the shortbread shapes on the prepared baking sheet, leaving about 1 inch of space between each piece.
  5. Bake for 18-20 minutes, or until lightly golden brown.

Make the Strawberry Mousse:

  1. In a blender or food processor, puree the strawberries with the granulated sugar and honey until smooth.
  2. In a separate bowl, whip the heavy cream until stiff peaks form.
  3. Fold the whipped cream into the strawberry mixture until well combined.
  4. Stir in the mascarpone cheese.

Assemble the Cakes:

  1. Place a shortbread crust on each serving plate or individual cake stand.
  2. Spoon a generous helping of the strawberry mousse over the shortbread crust.
  3. Garnish with fresh mint leaves and serve immediately.

Notes

These individual cakes are perfect for spring entertaining, and can be made ahead of time by preparing the shortbread crust and strawberry mousse separately. Simply assemble just before serving to avoid sogginess from the whipped cream. Enjoy!
