Strawberry Matcha Crumble Bars
Ingredients
For the crust:
- 1 1/2 cups all-purpose flour
- 1/4 cup confectioners' sugar
- 1/2 cup unsalted butter, chilled and cut into small pieces
For the filling:
- 2 cups sliced strawberries
- 2 tablespoons matcha powder
- 2 tablespoons granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
For the crumble topping:
- 1/2 cup rolled oats
- 1/4 cup brown sugar
- 1/4 cup chopped pecans
- 1/2 cup unsalted butter, chilled and cut into small pieces
Instructions
Make the crust:
- Preheat your oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper.
- In a medium bowl, whisk together the flour and confectioners' sugar. Add the cold butter and use a pastry blender or your fingertips to work it into the flour until the mixture resembles coarse crumbs.
- Press the crumb mixture evenly into the prepared baking dish.
Make the filling:
- In a large bowl, combine the sliced strawberries, matcha powder, granulated sugar, cornstarch, and lemon juice. Let it sit for about 15 minutes, allowing the strawberries to release their juices and the mixture to thicken.
- Spread the strawberry mixture evenly over the crust.
Make the crumble topping:
- In a small bowl, whisk together the rolled oats, brown sugar, and chopped pecans.
- Add the cold butter to the oat mixture and use your fingers or a pastry blender to work it into the dry ingredients until the mixture is crumbly.
- Sprinkle the crumble topping evenly over the strawberry filling.
Bake and serve:
- Bake for 40-45 minutes, or until the crust is golden brown and the filling is bubbly and slightly caramelized.
- Let cool completely in the pan before cutting into bars.
