Strawberry Biscotti with Lemon Glaze

A twist on traditional almond biscotti, this Italian-inspired treat combines sweet strawberries and a tangy lemon glaze.

Strawberry Biscotti with Lemon Glaze

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup chopped strawberries (fresh or frozen)
  • 1/4 teaspoon salt
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice

Instructions:

Step 1: Preheat the Oven and Prepare the Biscotti Dough

Preheat your oven to 350°F (175°C). In a medium bowl, whisk together flour, sugar, baking powder, and salt.

Step 2: Mix in Wet Ingredients

In a large bowl, combine eggs, vanilla extract, chopped strawberries, lemon zest, and lemon juice. Whisk until well combined.

Step 3: Add Dry Ingredients to the Biscotti Dough

Gradually add the dry ingredients (flour mixture) to the wet ingredients and mix until a dough forms.

Step 4: Shape the Biscotti Dough into Logs and Bake

Divide the dough in half, shape each half into a log about 12 inches long, and place them onto a baking sheet lined with parchment paper. Bake for 25-30 minutes or until lightly golden brown. Remove from the oven and let cool for 10 minutes.

Step 5: Cut the Biscotti Logs and Add the Lemon Glaze

Reduce the oven temperature to 325°F (160°C). Slice each log into 1/2-inch thick slices, place on a baking sheet lined with parchment paper, and bake for an additional 15-20 minutes or until crispy. Meanwhile, whisk together powdered sugar and lemon juice to make the glaze.

Step 6: Dip the Biscotti Slices in Lemon Glaze

Dip each biscotti slice into the lemon glaze and serve.
