Starry Night Stuffed Delicata Squash
Servings: 4-6
Ingredients:
For the squash:
- 2 large delicata squashes (about 1 pound each)
- 2 tablespoons olive oil
- Salt and pepper, to taste
For the filling:
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 cups mixed greens (such as kale, spinach, and collard greens)
- 1 cup crumbled goat cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped pistachios
- Salt and pepper, to taste
Instructions:
Roast the squash:
- Preheat the oven to 400°F (200°C).
- Cut each delicata squash in half lengthwise.
- Scoop out the seeds and membranes.
- Brush the inside of the squashes with olive oil and season with salt and pepper.
- Place the squashes on a baking sheet, cut side up.
- Roast for 30-40 minutes or until tender.
Prepare the filling:
- In a large skillet, heat the olive oil over medium-high heat.
- Add the chopped onion and cook for 3-4 minutes or until softened.
- Add the garlic and cook for an additional minute.
- Stir in the mixed greens and cook until wilted.
- Stir in the crumbled goat cheese until melted.
- Season with salt and pepper to taste.
Assemble and serve:
- Once the squashes are tender, let them cool slightly.
- Fill each squash with the green filling mixture.
- Sprinkle the chopped parsley and pistachios over the top.
- Serve warm, garnished with additional parsley if desired.
