Starry Night Stuffed Delicata Squash

A vibrant and flavorful winter squash dish, filled with a medley of sautéed greens, creamy goat cheese, and crunchy pistachios.

Starry Night Stuffed Delicata Squash

Servings: 4-6

Ingredients:

For the squash:

  • 2 large delicata squashes (about 1 pound each)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

For the filling:

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups mixed greens (such as kale, spinach, and collard greens)
  • 1 cup crumbled goat cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped pistachios
  • Salt and pepper, to taste

Instructions:

Roast the squash:

  1. Preheat the oven to 400°F (200°C).
  2. Cut each delicata squash in half lengthwise.
  3. Scoop out the seeds and membranes.
  4. Brush the inside of the squashes with olive oil and season with salt and pepper.
  5. Place the squashes on a baking sheet, cut side up.
  6. Roast for 30-40 minutes or until tender.

Prepare the filling:

  1. In a large skillet, heat the olive oil over medium-high heat.
  2. Add the chopped onion and cook for 3-4 minutes or until softened.
  3. Add the garlic and cook for an additional minute.
  4. Stir in the mixed greens and cook until wilted.
  5. Stir in the crumbled goat cheese until melted.
  6. Season with salt and pepper to taste.

Assemble and serve:

  1. Once the squashes are tender, let them cool slightly.
  2. Fill each squash with the green filling mixture.
  3. Sprinkle the chopped parsley and pistachios over the top.
  4. Serve warm, garnished with additional parsley if desired.
