Ingredients
For the fritters:
- 2 medium zucchinis
- 1 pound boneless, skinless chicken breasts
- 1/4 cup wheat flour
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro (optional)
- 2 cloves garlic, minced
- 2 tablespoons olive oil
For the tzatziki sauce:
- 1 large cucumber
- 1 cup Greek yogurt
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped fresh dill (optional)
Instructions
To make the fritters:
- Grate the zucchinis: Use a box grater or a food processor with the shredding attachment to grate the zucchinis.
- Prepare the chicken: Cut the chicken breasts into small pieces and season with salt, black pepper, cumin, and paprika.
- Sauté the chicken: Heat 1 tablespoon of olive oil in a pan over medium-high heat. Add the chicken and cook until browned, about 5-6 minutes. Set aside.
- Sauté the zucchinis: In the same pan, add the remaining 1 tablespoon of olive oil. Add the grated zucchinis and cook until they release their liquid and start to brown, about 5 minutes.
- Combine the chicken and zucchinis: Add the cooked chicken back into the pan with the zucchinis. Stir in the chopped cilantro (if using) and garlic.
- Make the fritter mixture: In a large bowl, combine the wheat flour, salt, black pepper, cumin, and paprika. Add the zucchini-chicken mixture to the dry ingredients and stir until just combined.
- Shape the fritters: Using your hands or a spoon, shape the mixture into small patties, about 1 1/2 inches in diameter.
To make the tzatziki sauce:
- Grate the cucumber: Use a box grater or a food processor with the shredding attachment to grate the cucumber.
- Combine the sauce ingredients: In a bowl, combine the grated cucumber, Greek yogurt, lemon juice, olive oil, salt, and pepper. Mix well.
- Taste and adjust: Adjust the seasoning as needed.
To cook the fritters:
- Heat oil for frying: Heat about 1/2 inch (1 cm) of oil in a large skillet over medium-high heat until it reaches 350°F (175°C).
- Fry the fritters: Carefully place 3-4 fritters into the hot oil and fry until golden brown, about 2-3 minutes per side. Repeat with the remaining fritters.
- Serve: Serve the crispy fritters with a dollop of tzatziki sauce on top.
Tips
- To make the fritters more crispy, you can chill them in the refrigerator for at least 30 minutes before frying.
- If you want to bake the fritters instead of frying, preheat your oven to 400°F (200°C) and cook for about 15-20 minutes or until golden brown.
- You can also make the tzatziki sauce ahead of time and store it in the refrigerator for up to a day.
