Spicy Sweet Potato Gnocchi with Brown Butter Sage Sauce

Ingredients:
- For the gnocchi:
- 2 large sweet potatoes, cooked and mashed
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/4 cup grated Parmesan cheese
- 1 egg, lightly beaten
- 1/2 teaspoon cayenne pepper
- For the sauce:
- 4 tablespoons unsalted butter
- 2 tablespoons chopped fresh sage
- Salt and black pepper
Instructions:
To make the gnocchi:
In a large bowl, combine the mashed sweet potatoes, flour, salt, Parmesan cheese, egg, and cayenne pepper. Mix everything together until just combined.
Turn the dough out onto a floured surface. Roll it out about 1 inch thick, then use a ravioli cutter or the rim of a glass to cut out circles.
To shape into gnocchi, hold a circle by one end and press the tines of a fork into the dough to make a few indentations on both sides. This will help the gnocchi cook evenly and give them a pretty texture.
To make the sauce:
- In a medium skillet, melt the butter over medium heat until it turns golden brown. Be careful not to let it burn!
- Stir in the chopped sage leaves.
- Season with salt and black pepper to taste.
Bring a large pot of salted water to a boil and cook your gnocchi for 2-3 minutes, or until they float. Drain them with a slotted spoon and return them to the skillet with the brown butter sauce.
Toss everything together until the gnocchi are evenly coated in the sauce. Serve immediately.
Variations:
- For an extra nutty flavor, you can toast some pine nuts or walnuts before chopping them up and sprinkling them over your gnocchi.
- If you're feeling fancy, you could even add a pat of whipped butter on top of each serving!
