Ingredients:
- 1 lb peeled and deveined shrimp
- 2 cups cubed seedless watermelon
- 1 red bell pepper, cut into chunks
- ½ cup fresh cilantro, chopped
- 1 tbsp lime juice
- 1 tsp chili powder
- ½ tsp cumin
- ¼ tsp salt
- ¼ tsp black pepper
For the Mint Yogurt Dip:
- 1 cup plain yogurt
- ¼ cup fresh mint leaves, chopped
- 1 clove garlic, minced
- 1 tbsp lemon juice
- Pinch of salt
Instructions:
- In a large bowl, combine shrimp, watermelon, bell pepper, cilantro, lime juice, chili powder, cumin, salt, and pepper. Toss to coat evenly.
- Thread the shrimp, watermelon, and bell pepper onto skewers, alternating between ingredients.
- In a small bowl, whisk together yogurt, mint, garlic, lemon juice, and salt. Refrigerate until ready to serve.
- Grill or broil skewers for 2-3 minutes per side, or until shrimp are pink and cooked through.
- Serve skewers immediately with the mint yogurt dip.
