Spicy Shrimp & Watermelon Skewers with Mint Yogurt Dip

A refreshing and surprisingly delicious summer appetizer or light meal. Juicy shrimp, sweet watermelon chunks, and a hint of spice combine perfectly with a cool mint yogurt dip.

Ingredients:

  • 1 lb peeled and deveined shrimp
  • 2 cups cubed seedless watermelon
  • 1 red bell pepper, cut into chunks
  • ½ cup fresh cilantro, chopped
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • ½ tsp cumin
  • ¼ tsp salt
  • ¼ tsp black pepper

For the Mint Yogurt Dip:

  • 1 cup plain yogurt
  • ¼ cup fresh mint leaves, chopped
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • Pinch of salt

Instructions:

  1. In a large bowl, combine shrimp, watermelon, bell pepper, cilantro, lime juice, chili powder, cumin, salt, and pepper. Toss to coat evenly.
  2. Thread the shrimp, watermelon, and bell pepper onto skewers, alternating between ingredients.
  3. In a small bowl, whisk together yogurt, mint, garlic, lemon juice, and salt. Refrigerate until ready to serve.
  4. Grill or broil skewers for 2-3 minutes per side, or until shrimp are pink and cooked through.
  5. Serve skewers immediately with the mint yogurt dip.
